Wheat-Free Gluten-Free Oatmeal Cookies

1/2 cup ‘Coconut World’ coconut sugar
1/2 cup packed brown sugar
1/2 cup unsalted butter
1 egg
1 t alcohol free vanilla
1 1/2 cups Pamela’s Gluten-Free Bread Mix & Flour Mix
1/4 t Rumford’s baking powder, alum free
2 cups gluten free rolled oats
Heat oven to 375 degrees. Mix sugars, butter, egg and vanilla. Stir in the remaining ingredients (dough will be stiff). Drop dough by rounded teaspoonfulls onto ungreased cookie sheet. Bake until set but not hard, 9 to 11 minutes. Cool about 3 minutes before removing from cookie sheet.
